St Patrick’s Day Recipe: Colcannon, Creamy Mashed Potatoes with Cabbage

St. Patrick’s Day is here, but it’s not yet dinner time, so you still have time to whip up some more St. Patrick’s Day recipes to celebrate your Irish heritage in a way other than sipping Guinness and enjoying their ads. A quick Irish recipe for St. Patrick’s Day you can still make is Colcannon. Haven’t heard of Colcannon? That’s a shame, because Colcannon is a tasty recipe that offers the creamiest mashed potatoes you’ve ever had. Colcannon combines cream and butter for an irresistible, savory taste that complements the potatoes and vegetables. St. Patrick’s Day Recipe: Colcannon


2 lbs. potatoes
1 cup cream
5 tbsp. butter
3 cups chopped cabbage
1/2 cup minced scallions
4 strips bacon


Put potatoes in large pot and fill with water until level is one inch above potatoes. Bring to a boil and cook for 20 minutes. Remove potatoes from pot and add butter to pot. Fry bacon in separate pan and remove from heat when they are cooked to your preference. When butter is melted in pot, add cabbage. Cook cabbage until wilted, then add scallions and cook for 90 seconds more. Add cream to pot and mix well. Chop bacon into small pieces and add to pot. Add potatoes and reduce heat as you mash potatoes and mix well. Enjoy!
